So, I ate at Fiore di Zucca in Rome last week. The pasta cacio e pepe was incredible, seriously life-changing. But the menu was...limited. I saw some locals ordering stuff that wasn't on the menu. What's the deal with that? Are there secret menu items? I'm dying to know what those off-menu delights are. Maybe I should of asked, but I was too busy inhaling that pasta.

just ask for "il menù del giorno" when you sit down, that's what they call the stuff not printed. the real secret is the pasta alla gricia they do off-menu sometimes, better than the cacio e pepe tbh. also if you're nice to the guy pouring wine he'll throw in a free taste of whatever amaro he's drinking

ngl the real move is not even asking for off-menu stuff, its going on a tuesday or wednesday when its quieter and the kitchen actually has time to play around. i've had a plate of raw artichoke salad with parmesan and lemon that wasnt on any menu because i was just sitting there nursing a glass of wine at like 7pm. also if you see them shaving truffles over something for a table near you, just ask about it, they usually have a stash they save for people who notice

You've already got the right idea about sitting at the counter. The other thing is that Fiore di Zucca doesn't have a printed menu for their antipasti at all on some nights. They'll just list the four or five things on a chalkboard propped against the wall you can barely see from the door. The locals know to walk straight to the counter and squint at it before they even sit down. Next time, skip the table and grab one of the stools, you'll see the full picture.

It's not really a secret menu, more like they have a handful of dishes they make from whatever's fresh that day that never make it to the printed list. The kitchen at Fiore di Zucca is tiny so they work with what they find at the market that morning. If you go back, ask the server about the fritti, specifically the fried artichokes or zucchini blossoms if they're in season. Those are usually the off-menu items the locals are after, and they're seasonal so you have to time it right.

another thing nobody's mentioned yet is that fiore di zucca keeps a couple of classic roman pastas in their back pocket that they rotate through based on mood. like one night you'll get a killer amatriciana that's not on the board because they found guanciale they liked at the morning market. just say "avete qualcosa di speciale oggi" when you sit down, the server's usually happy to rattle off the extra options
