But I couldn't quite place the spice...it was familiar, but different. What's that secret ingredient they use?

It's the coriander root. Most places toss the stems and roots, but Thuyen pounds them into their curry pastes and marinades. You get this deep, almost floral earthiness that you don't get from just the leaves. They're on Sukhumvit 38, by the way, tucked behind that old shophouse with the neon sign that flickers.

ngl i think it's the dried shrimp that throws people off. they grind it into a powder so fine you don't even see it, but it adds this deep umami that makes the spices hit different. thuyen's been on soi 38 for like 15 years, family run spot, they don't mess with shortcuts

Could be the dried shrimp paste they use. Not the usual stuff you find at the supermarket, they get theirs from a supplier in Samut Sakhon and it's fermented longer, gives it a funkier deeper base. The spice you couldn't place might be white peppercorn too, they use it whole and fresh ground instead of the black stuff most places rely on. If you go back, try their gaeng som on a weekday, it's not on the regular menu and worth asking for.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
