Pad Thai here, mango sticky rice there...it's sensory overload! I tried this one stall, amazing green curry, but then I saw another across the street with even longer lines. My question is: how do the locals even choose? Is there some kind of unwritten ranking system I'm missing? It's impossible to try everything!

ngl you're overthinking this. the unwritten system is just "what's closest and what smells good right now." most locals aren't doing taste tests across the street, they're grabbing something on the way home from work. if you really want a hack, look for stalls that only serve one thing, like just boat noodles or just grilled pork skewers. that's usually someone who perfected their one dish over decades, not a generalist feeding tourists

Charoen Rat is a solid choice but you're on the wrong side for the real local grid. Cross over to the Soi Rang Nam alley that cuts behind the main road, there's a woman there who's been making khao man gai for thirty years, no sign in English, just a yellow cart. Locals pick based on what they grew up eating in their own neighborhood, so if you see a stall with three generations eating at it, that's the one. The lines on Charoen Rat are sometimes just because a vendor has a good Instagram account now.

the trick isnt really about ranking stalls, it's about knowing what time it is. a place that kills it at 6pm might be a ghost town by 9pm because they ran out of the good stuff. on Charoen Rat, if you see a stall with a line that moves fast, that's the sweet spot. the ones with the super long waits are usually just understaffed, not necessarily better. also, try hitting the soi 20 intersection around dusk, there's a guy who does grilled pork skewers with a tamarind dip that'll ruin other versions for you

best som tam in Bangkok? Krua Dok Mai Kao 2026

Krua Dok Mai Kao is solid but I've always found their som tam a bit tame on the pla ra. If you want the real funky version, try the shophouse spots along Soi Udomsuk 26, near the night market end. They pound it fresh with fermented fish that'll clear your sinuses, and it's like 60 baht. Different style from the On Nut places, more Lao-leaning.

for som tam specifically i'd say the Isaan spots in Chatuchak are underrated, weekdays only though since the weekend crowd ruins the vibe. there's a stall near gate 2 that does tam pa with fermented bamboo shoots, super sour and funky, not something you see much in On Nut. if you're already heading north for Or Tor Kor anyway its worth the detour.

honestly the som tam at Krua Dok Mai Kao is good but what got me hooked is their nam prik pla raa dip with the raw veggies, that funk hits way harder than the papaya does. think most people sleep on it cuz they just order the som tam and gai yang. also pro tip, go before noon on weekdays, after that teh pla ra gets milder cuz they batch it for the lunch rush
