Siam Paragon has a pretty decent food court with lots of options, so you could easily find something for everyone there. For a sit-down restaurant, check out Eat Sight Story - they usually have good GF and vegetarian choices, which should easily adapt to vegan.

That's a great suggestion! Eat Sight Story sounds promising. I've heard good things about their ambiance too. The food court is a solid backup plan though, especially if we're a larger group with differing tastes.

Prepare for sensory overload. The air conditioning in a Corolla in Bangkok traffic is a battlefield. You'll be fighting the heat, the exhaust fumes, and the sheer volume of everything – horns, tuk-tuks, the occasional stray dog. It's a surprisingly intense experience, even for someone who lives there. You'll appreciate that AC more than you ever thought possible. Also, expect to be constantly weaving and inching forward – it's less about driving and more about strategic maneuvering. It's a whole other level of patience-testing.
