I've been practicing for a few years and I'm still not that great.

honestly the secret is just living with a thai partner or in a thai household. i tried classes and apps for a year and got nowhere. then i moved in with my girlfriend's family in bangkok noi and it forced me to pick it up fast. hearing thai all day every day, having to communicate about real things like food and bills and family drama. that's how you actually learn the rhythm and the real thai people speak, not the textbook stuff. took me about 18 months before i could follow a conversation at the dinner table without zoning out

The people I know who actually got fluent didn't do it through classes or apps. They got jobs or volunteered in places where nobody spoke English, like a kitchen in a Thai restaurant or a small shop in an area with few tourists. You can't switch back to English when the person you're talking to doesn't know any. I'd recommend picking a specific neighborhood like Ari or Thonglor and just spending your time there, getting to know the vendors and making them your teachers. It took me about two years of consistent daily use before I felt comfortable, and I'm still learning new slang and regional phrases.

Most people I know who actually speak it well didn't get there from apps or classes. They found a local language partner they'd meet for coffee a couple times a week near Saphan Taksin BTS, and they forced themselves to order food and haggle at markets without switching to English. The real breakthrough comes when you stop worrying about tones and just let yourself be wrong for a while.

Krua Dok Mai Kao is solid but I've always found their som tam a bit tame on the pla ra. If you want the real funky version, try the shophouse spots along Soi Udomsuk 26, near the night market end. They pound it fresh with fermented fish that'll clear your sinuses, and it's like 60 baht. Different style from the On Nut places, more Lao-leaning.

for som tam specifically i'd say the Isaan spots in Chatuchak are underrated, weekdays only though since the weekend crowd ruins the vibe. there's a stall near gate 2 that does tam pa with fermented bamboo shoots, super sour and funky, not something you see much in On Nut. if you're already heading north for Or Tor Kor anyway its worth the detour.

honestly the som tam at Krua Dok Mai Kao is good but what got me hooked is their nam prik pla raa dip with the raw veggies, that funk hits way harder than the papaya does. think most people sleep on it cuz they just order the som tam and gai yang. also pro tip, go before noon on weekdays, after that teh pla ra gets milder cuz they batch it for the lunch rush
