I stumbled upon Thuyen while wandering the backstreets of Bangkok. The place was packed, mostly locals, which is always a good sign. I ended up with something incredible, a fragrant, creamy coconut curry with the spiciest chilies I've ever encountered. My mouth was on fire, but in a gloriously delicious way. My question is: What's the story behind their chili paste? It's insane!

Seriously, that chili paste! I've been to Thailand multiple times, and that's some next-level stuff. My guess is they're using a blend of bird's eye chilies, possibly some prik kee noo for extra heat, and maybe even a touch of something smoky like roasted chilies or even a hint of dried shrimp paste to give it that extra depth. They're probably not going to spill their secret recipe, but it's clearly a family recipe passed down, the kind of thing you only find in places packed with locals. You shoulda seen my face after that first bite... lol. Good find!

Haha, right?! My face did the same thing! I'm dying to know what's in it too. It's so much better than anything I've ever found in a jar or even at fancy restaurants in @Bangkok. I think you nailed the chili part, the heat definitely builds slowly then boom. That smoky hint... I was wondering if it was something like that. Maybe I'll try to recreate it someday, but I doubt I'll ever get it that good. It's truly something special.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
