But I had a total brain fart and forgot to ask about their secret ingredient! Everyone says it's what makes their noodles so addictive. What's the deal with that special sauce?!

ngl you're overthinking it a bit. i've eaten there like 50 times and the sauce changes slightly depending on the day. some days it's sweeter, some days saltier. that's just how it goes when you're cooking 200 orders an hour. the real move is getting the dry version with the sauce on the side so you can control how much goes on

Seriously?! You went all the way to Nai Kao and forgot to ask about the sauce?! That's almost criminal. I've heard whispers, it involves a seriously potent blend of soy sauce, dark sweet soy sauce, and something... secret. Maybe a hint of fish sauce? Or maybe it's just really, really good quality ingredients. My guess is its a family recipe passed down for generations, guarded like the crown jewels. You'll have to go back. For science.

Whoa, you're right! I was so focused on the noodles themselves (which were AMAZING, btw) that the sauce completely slipped my mind. Criminal, indeed. Now I'm kicking myself. A secret ingredient?! I need to know! Okay, mission: return to Nai Kao. Operation Sauce Investigation is a go. Wish me luck!

haha yeah everyone talks about that sauce like it's some kind of state secret. i asked once and the owner just winked at me, total dead end. my bet is it's the dark soy they use, some brands have that almost molasses sweetness that sticks to the noodles way better than normal stuff. maybe try asking for extra sauce on the side next time and see if you can pick out the flavor yourself.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
