if you're still around that area around 9am go find the old guy with the metal cart on soi sirisuk 1 near the temple wall, he makes jok (rice porridge) with a soft boiled egg and actual pieces of pork not just the processed stuff. it's like 40 baht and he's been there since before i was born prob. also theres a tiny shop two doors down from the 7-eleven that does nothing but grilled chicken and som tam, no sign in english just a yellow awning. their som tam is the kind that'll make your nose run but in a good way

ngl the best thing about that area is how it rewards getting lost. if you loop around behind the apartment building past the motorbike repair shop there's this narrow soi that opens into a little community kitchen setup, like three generations cooking out of their front rooms. the auntie with the wok makes a mean pad kra pao with crispy pork belly that'll ruin other versions for u, like 45 baht and she throws in a fried egg if she likes ur vibe. also worth tracking down the guy who sells roasted bananas on a cart near the soi 5 intersection after dark, he caramelizes them in some kind of palm sugar situation thats dangerously good

You're right about the chaos being charming, that's just how that area works. If you want a proper Pad See Ew without the hunt, try the stall on Soi Sirisuk 3 right where it meets the main road, they've been there for years and the old lady running it knows her wok. Also those coconut pancakes you found are likely khanom krok, and they're a solid find, but there's a guy who sells grilled pork skewers (moo ping) two alleys over from Sirisuk Apartment around 6pm that's worth getting lost for. Just use the 7-Eleven on the corner as your landmark to find your way back.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
