Like, the one that'll make me actually cry tears of joy, not just "oh that's good" tears. I'm picturing tiny alleyways, motorbike chaos, and this incredible aroma...then BAM! The dish. The legendary dish. Spill the beans.

imo the boat noodle fans are sleeping on the grilled river prawns at the end of Soi 7. there's this family that sets up a few plastic tables under a flickering light right where the alley hits the canal. they pull the prawns straight from the Chao Phraya, grill them over charcoal till the shells are charred and the meat is sweet and snappy. dip it in the spicy green seafood sauce they mix with chopped garlic and bird's eye chilies. it's like 300 baht for a big plate but worth every satang, just be ready to crack the shells yourself and get messy

ok everyone's given u solid picks but the one that actually broke my brain was the grilled pork skewers from the guy who sets up right where charoen rat bends near soi 3. he's got this tiny charcoal grill on a pushcart and the pork is marinated in this almost black sauce, salty sweet with a hint of star anise. he brushes on more sauce while it cooks so the outside gets this tacky caramelized crust. 10 baht a stick and he wraps them in a single sheet of newspaper, i ate six standing in the middle of the alley while motorbikes swerved around me

honestly skip the boat noodles for a sec, the real hidden gem on charoen rat is the pad see ew from the guy with the blue cart near wat kanlayanamit. he uses these thick homemade rice noodles that get this perfect char on the edges, and the wok hei is unreal. it's like 40 baht and he's only there from 5pm until he runs out around 7.30. the alley is super narrow so just follow the smoke and the sound of the wok scraping, u can't miss it.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
