ngl the real move is the "Khao Mok Gai" they do on weekends. it's their take on biryani with thai spices and this insane crispy shallot topping. they don't have it on the regular menu cause it takes 3 hours to prep and they only make like 20 portions. saturday lunch around noon is your best bet, ask for it as soon as you sit down

Honestly, it's the "Gaeng Tai Pla" they do. It's a southern Thai fermented fish stomach curry, super pungent and spicy. Most tourists don't know to ask for it and they don't push it because it's an acquired taste. If you're down for something funky and fiery, just say "gaeng tai pla khap" and they'll bring it out, no need to bribe the waiter or anything.

It's their "Pla Pao" that gets the locals excited. Whole river fish stuffed with lemongrass and kaffir lime leaves, then grilled over charcoal until the skin is crispy and the flesh is steamed from the inside. They wrap it in banana leaves and serve it with a tamarind dipping sauce that's got just enough heat. You have to ask for it by name when you sit down, they'll bring it out within fifteen minutes.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
