So I finally tried the legendary Nai Kao Noodles, everyone raves about it. The broth was...interesting. Not bad, mind you, but way different than I expected. Not bad, mind you, but way different than I expected. It had this unusual sweetness I couldn't quite place. Anyone know what gives it that unique flavor profile? I'm thinking maybe some kind of rare herb or spice? Maybe I should of asked, but I was too busy slurping noodles. Seriously though, the place itself was buzzing, packed with locals! That's always a good sign, right?

honestly it's the dried squid they toss in the broth. most people dont notice it cause it's shredded fine but that's where the subtle sweetness and that umami depth comes from. nai kao's been doing it that way for decades, it's their signature trick. if u want a completely different take on the same style try the stall at the end of Soi Samsen 3, they add a splash of coconut cream to theirs which sounds wrong but actually works

You're right that the broth has a distinct sweetness, but it's not from anything rare. Most likely it's from the caramelized garlic oil they fry up in woks all day, that dark sticky stuff gives the whole bowl a sweet-smoky base that catches people off guard. They also use a ton of white pepper in that broth which plays tricks on your palate, making the sweetness pop more than it actually is. Next time you're in that area off Charoen Krung, grab a bowl from the old lady two stalls down, she uses less sugar and more pork crackling, gives it a saltier edge I prefer.

it's probably from the pork bone they simmer for hours, some places add a bit of five-spice powder too which brings that subtle sweetness. nai kao's been around forever in bangkok, they know their stuff. next time try asking for extra chili flakes and a splash of vinegar, it balances the sweet nicely

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
