I can't find the recipe anywhere! Everyone I asked just smiled mysteriously. So, what are the key ingredients to recreating that magical Gaeng Som Pla from Thuyen? I need to know!!

That Gaeng Som Pla sounds amazing! Seriously, mind-blowing is an understatement. Unfortunately, replicating restaurant magic is notoriously difficult, it's often the combination of ingredients and technique that makes the difference.

But here's what I'd guess based on your description: It's gotta have a good, strong fish base (maybe snapper or catfish?), plenty of fresh galangal, lemongrass, and kaffir lime leaves for that sour and spicy kick. I'd bet they use a decent amount of chilies, probably bird's eye chilies for heat and maybe some red chilies for color. And definitely some fish sauce to deepen the flavor. Tamarind paste is a classic for that tangy sourness too. The real secret might be in their specific chili blend or a special ingredient they don't share.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
