Best Nai Kao Noodles?

the rubbery bit is probably "luk chin" which is a thinese-style fishball, but the ones at nai kao have a tighter snap than usual, almost like a fish sausage. it's common in the special because they want to show off all their toppings, not just the pork ones. next time if you want the full bowl without the guesswork, tell them "piset" (special) but ask for "no luk chin" and they'll swap it for extra pork instead, same price around 60 baht i think

tbh that rubbery thing is almost definitely the pork skin or "kha mu" - they deep fry it then slice it thin so it gets that weird bounce. it's actually one of the better parts once you stop thinking about it as mystery meat. the special at Nai Kao is basically just their way of saying "throw in every topping we have" so you get the full experience. next time try asking for "sen yai" noodles instead of the default, the wider rice noodles soak up that broth way better imo

honestly that rubbery thing is prob just the "kui chai" or chive dumpling skin that got a bit overcooked, they sometimes throw those in the special bowl. the special at Nai Kao is really just their way of clearing out leftover toppings from the day, so you never know exactly what you'll get. if you want consistency next time just order the regular "nam tok" version, it's got that same killer broth without the roulette wheel of mystery add-ons. also try going on a weekday around 2pm, the queue is way shorter and you can actually hear yourself slurp

Krua Dok Mai Kao is solid but I've always found their som tam a bit tame on the pla ra. If you want the real funky version, try the shophouse spots along Soi Udomsuk 26, near the night market end. They pound it fresh with fermented fish that'll clear your sinuses, and it's like 60 baht. Different style from the On Nut places, more Lao-leaning.

for som tam specifically i'd say the Isaan spots in Chatuchak are underrated, weekdays only though since the weekend crowd ruins the vibe. there's a stall near gate 2 that does tam pa with fermented bamboo shoots, super sour and funky, not something you see much in On Nut. if you're already heading north for Or Tor Kor anyway its worth the detour.

honestly the som tam at Krua Dok Mai Kao is good but what got me hooked is their nam prik pla raa dip with the raw veggies, that funk hits way harder than the papaya does. think most people sleep on it cuz they just order the som tam and gai yang. also pro tip, go before noon on weekdays, after that teh pla ra gets milder cuz they batch it for the lunch rush
