I went to Yayoi in @Bangkok last week, the one near the river. The food was amazing, seriously some of the best Thai I've had. Anyone know what that was? I'm dying to recreate it. I tried asking the staff but my Thai's terrible.

Yeah, that's almost certainly khem pak boong, pickled water spinach stems. They're hollow and crunchy, not solid like green beans. The intense flavor comes from the fermentation process, it's a salt brine with a bit of rice vinegar and sometimes garlic or chili. You can find jars of it at the fresh market stalls in Or Tor Kor or even at Gourmet Market in Siam Paragon, usually in the Thai condiment section near the pickled garlic. For a DIY version, try slicing the stems thin and packing them in a jar with a 3:1 water to vinegar ratio, a tablespoon of salt, and a smashed clove of garlic, then let it sit for at least a week in the fridge.

Sounds like you hit the jackpot with that Yayoi find! That intense pickled side dish...my guess is it's tua phlo, which are pickled young morning glory stems. They're super common in Isaan cuisine and pack a seriously funky, vinegary punch. The green beans appearance fits, and the intense flavor... yeah, that's totally tua phlo. Try searching for Isaan-style pickled morning glory recipes online; you should find a ton. Good luck with your recreating!

oh man, that tangy kick is prob khem pak boong like others said. if you're near Bang Rak, the little market stalls along Charoen Krung sell it loose by the kilo, way cheaper than Or Tor Kor

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
