The noodles were perfectly charred, the sauce intensely flavorful, unlike anything I'd tasted before. It was incredible. My question is: What's the secret ingredient in their Pad See Ew? I asked the owner once and he just pointed to a jar of preserved radish behind the counter. It's not in the noodles themselves but ground into the sauce base, adds that savory depth you can't place. Most places skip it because it takes extra prep time. Grab the tod mun pla from the cart across the street while you're there, they fry them fresh with a bit of kaffir lime leaf that cuts through the oil.

I'd bet money it's the dried squid they grind into the sauce base, you won't taste it directly but it adds that lingering savory note that's hard to place. The old man who runs the morning shift keeps a small jar of it behind the bigger containers, I only spotted it because he dropped the lid once. If you're around on a Tuesday morning you can catch them making the sauce from scratch, the smell from the alley is completely different from their regular cooking.

oh that pad see ew is something else right. i live a few blocks away and go there maybe twice a week. the secret everyone misses is the lard. they render their own pork fat and use that instead of vegetable oil. gives it that heavy coating on the noodles that soaks up the sauce differently. also they char a clove of garlic in the oil first then fish it out before adding the noodles. that subtle garlic smoke lingers in every bite without being overpowering. the morning cook is the one who does it best, the evening guy rushes through orders sometimes

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
