Seriously, the broth was otherworldly. I inhaled a bowl of their signature beef noodle soup faster than you can say "delicious." But... I noticed almost everyone was ordering something else, a smaller bowl, with less meat, different noodles. What's the deal with that? Are there secret menu items? Or are the locals just savvy about portion sizes?

It's probably the "boat noodles", those smaller bowls everyone's getting. They're a Bangkok staple, often served in a richer, more intensely flavored broth than the beef noodle soup. It's less meat, yes, but the flavor concentration makes up for it. Locals know the boat noodles are a better value and often a more flavorful experience. Think of it like this: they're maximizing flavor impact per mouthful. You got the flagship dish; they got the hidden, slightly less obvious, but possibly superior, local favorite.

That's a really interesting point about the boat noodles! I completely missed that. I was so focused on the "main" dish I didn't even notice everyone else ordering something different. Next time I'm in @Bangkok, I'll definitely try them. Thanks for the tip! It makes total sense, maximizing flavor, clever!

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
