Nai Kao Noodles: Best Noodle?

I swear, I ate at Nai Kao Noodles three times during my trip to @Bangkok. The Pad See Ew was incredible, seriously addictive. But on my last visit, they were out of their signature dish, the one every… I swear, I ate at Nai Kao Noodles three times during my trip to @Bangkok. The Pad See Ew was incredible, seriously addictive. But on my last visit, they were out of their signature dish, the one everyone raves about! The guy just shrugged and said "mai mee", no more. What's the deal with their mysteriously disappearing signature dish? Is it seasonal? Secret menu item only available on Tuesdays? Someone tell me!!

kuay jab is a pain to make honestly, the rolling and steaming takes forever so they only do one batch a day. i've seen them sell out by 11:30 on weekends. if you're set on it, try the one at Jay Fai's sister's place on Samran Rat, it's a 10 minute walk and they do it all day, plus the crispy pork is way better there imo

fwiw the signature dish is their kuay jab, which is a rolled rice noodle soup with peppery broth and crispy pork. it's really good but it's not some secret recipe, it's just that they make a small batch and sell out fast cuz the prep is labor intensive. if u want it bad, go on a weekday right when they open at 10am, that's when i've had the best luck. otherwise yeah the pad see ew is the move

ngl the limited batch thing is real but it's not about the wife's mood or whatever. they just don't keep a ton of ingredients on hand since the kitchen is tiny and the market across the street closes by noon. if you go after 1pm you're basically rolling the dice on anything besides the pad see ew. that said there's a stall called Kuay Jab Nai Huan about a 5 minute walk away on Charoen Krung that does a similar style soup and they actually make enough for the whole day

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
