So I finally made it to Nai Kao Noodles, the place everyone raves about in @Bangkok. The Pad See Ew was amazing, seriously life-changing. But there's this one thing... every table had a tiny, ornate s… So I finally made it to Nai Kao Noodles, the place everyone raves about in @Bangkok. The Pad See Ew was amazing, seriously life-changing. But there's this one thing... every table had a tiny, ornate silver bowl with a single, perfectly formed lime wedge in it. No one seemed to use them! What's the deal with those limes? Are they for show? Some kind of local custom I missed? It's bugging me!!

That little bowl is actually part of the old-school Bangkok noodle shop setup, but you're right that most people don't touch it. The lime is meant for the broth that comes with their kuay teow, but what you might have missed is the jar of pickled chillies in vinegar that should have been on the table too. Next time you go, grab a spoonful of those sliced chilies and the liquid, mix it into your pad see ew with a splash of that lime, and you'll get the full flavor balance the regulars know about.

ok so the lime is actually a palate cleanser between bites, not really for the noodles. some old school places in bangkok do that to reset your taste buds so every mouthful hits the same. weird but kinda cool once you know

the lime is actually traditional but not for the pad see ew specifically, nai kao's specialty is their kuay teow rua boat noodles which come with a darker broth that really benefits from that citrus kick. most people just order the pad see ew because it's famous on social media but the regulars know the lime is for the other stuff on the menu. try their tom yum noodle soup next time and squeeze that wedge in, completely different experience

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
