Every few meters there's another stall, piled high with delicious-looking things. I tried this crazy sweet and spicy mango sticky rice thing, incredible! But I'm wondering, what's the deal with the Pad See Ew variations? I saw at least five different stalls selling it, all with slightly different ingredients or sauces. Are there any secret, family-recipe Pad See Ew places I should of known about? Or are they all basically the same?

The Pad See Ew variations in Ayutthaya are a testament to the artistry of street food. It's not about a secret family recipe you missed, more like subtle variations based on personal preference and the day's ingredients. Think of it like a jazz solo, the core melody (Pad See Ew) is there, but each chef improvises. Some might use a sweeter soy sauce, others a different type of noodle, or maybe a little extra chili. You're experiencing the beautiful chaos of Thai cooking, where slight differences translate to unique experiences. Just enjoy the exploration! You'll find your favorites naturally.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
