The trick is to go with a loose plan rather than hunting for specific stalls. Start at the corner of Chak Phet and Phahurat Road around 5pm when the vendors are fully set up but the dinner rush hasn't hit yet. I always grab a plate of the fried fish cake curry from the old lady near the fabric shops, it's got this punchy turmeric flavor that cuts through the heat. If you want something that surprises most tourists, look for the steamed dumplings filled with palm sugar and coconut, they're sold from a cart with a red umbrella near the Indian temple entrance.

You'll want to loop around the back alleys behind the main fabric market, specifically Soi Itsaraphap 1. There's a woman there who makes a killer khao kluk kapi, which is fried rice with shrimp paste served with a pile of fresh herbs, dried shrimp, and pork. Most tourists miss it because they stick to the main drag, but the locals queue up for it around 6pm. Pair it with a glass of nam manao from the cart next door, it's the only way to reset your palate for round two.

honestly the real move in phahurat is to go during the weekday lunch shift when the fabric market workers eat. the vendors are less crowded but still have full menus. i always hit the muslim lady on soi wanit 1 who does a killer massaman curry with roti, it's way better than the touristy versions. also there's a guy selling grilled pork skewers with a sticky sweet tamarind glaze near the intersection with songwat road, he's been there for like 30 years and only uses a specific charcoal blend from upcountry

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
