for something quick and actually useful, hit up a proper hardware store called kitcharoen on sukhumvit soi 26. they stock heavy carbon steel cleavers from a local forge in nakhon pathom, around 400 baht each and they come with a basic wooden handle. not pretty but i've had mine for years and it still shaves paper after a quick hone.

The best local knife makers in Bangkok aren't in markets at all. There's a small forge called Ruen Urai off Rama IV Road, near the old British Embassy. They've been making knives for restaurants in the area for decades. You'll need to call ahead though, they don't keep much stock on hand and usually work by order. A solid chef's knife runs about 800 baht and they'll engrave your name on the blade for free.

skip chatuchak unless it's a weekend. try the old town area around charoen krung, there's a few metalworking shops that sell proper hand-forged knives. i got mine from a place called tang dao on soi 30, they're not fancy but the steel holds an edge way better than the tourist market stuff. expect to pay around 600-1500 baht depending on size

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
