honestly if you're building a track-focused jdm car like a s chassis or an rx7, check out racecraft in samut prakan. they do mostly circuit builds and suspension geometry setups, not just dyno pulls. the owner used to work with toyota team thailand so he actually knows what a car needs to handle. fair warning though, they're not cheap and they'll tell you if your build idea is dumb

If you're into rotary stuff or just want someone who really understands tuning rather than just bolting on parts, try PTT Garage out near Bang Na. They're not the flashiest shop and the place looks a bit rough, but the owner spent years in Japan working with RE Amemiya so the knowledge is legit. They're also a lot more patient with weird custom setups than most places.

depends what kind of JDM you're running tbh. if it's older stuff like an r32 or ae86, hit up garage faith in thon buri, they know the rb and 4age inside out. for newer stuff like evos or stis, i'd go to karn engineering on rama 9, they do a lot of the subaru crowd and the pricing is fair. just call ahead, both places get booked up quick

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
