I tried to find on reddit and found a "North Korean restaurant" and some others but they are closed now.

honestly the most unique spot i've been to lately is this place called The Iron Fairies in Thonglor. it's more of a bar but they do have food, and the whole place is styled like a dark fairy tale forge with thousands of hanging fairy jars and iron sculptures. the vibe is super intense, feels like you walked into a fantasy novel set in a smithy

another one that's still open and pretty wild is After You Dessert Cafe but specifically the one near Siam Paragon. i know it sounds basic but they have this shibuya honey toast that comes out looking like a whole brick of bread carved into a mountain with ice cream and honey dripping down. not a theme per se but the presentation is extra

if you want something truly weird, try the Caturday Cat Cafe in Sathorn. it's a cat cafe but they also serve food, and the cats just roam around while you eat. not exactly a "theme" like maid cafes but it's definitely unique in bkk. just don't expect Michelin star food obviously

ngl the most out-there place i've been to recently is this spot called The Never Ending Summer in Klong San. it's in an old warehouse by the river and the whole place is just... plants everywhere. like massive jungle vibes with hanging vines and ferns all over the walls. the food is legit tho, they do this whole thai fusion thing with a tasting menu that changes every month. pricey for bkk standards but worth it for the atmosphere

another one that's still kicking is this place on Sukhumvit 31 called Eat Me. the name is weird enough but the interior is like a dark art gallery with random sculptures and paintings on every wall. they have a secret upstairs lounge that's even more trippy with neon lights and weird furniture. food is solid too but honestly you go for the vibe more than anything

if you're into the whole "eating in the dark" thing there's a spot in Sathorn called Dining in the Dark. you literally eat blindfolded in a completely black room. it's a bit gimmicky but the whole experience of not knowing what you're eating until after is pretty wild. they do a set menu so you just have to trust them

There is a restaurant called Feast that has a dark, theatrical vibe with skulls and coffin tables.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
