this itinerary covers the big sights well, but i'd suggest swapping the order on day 1 if you're a morning person. the museum is small and you'll breeze through it, so hit liexi park first around 8am when the old guys are doing tai chi and the lake is glassy. then do the museum after, it's quieter in the late morning. for the wanshouyan site, bring mosquito repellent, the caves are damp and the bugs are persistent even in cooler months.
on day 2, the bus to taining is fine but the 8am departure fills up fast with locals heading to work. aim for the 7:30 bus if you can, you'll get a seat and beat the tour groups by a solid hour. also the fish noodle soup near the geopark is good but the place two doors down, no english sign, does a better version with pickled vegetables for the same price.
honestly this is a solid itinerary, i've done most of it myself. one thing i'd add for day 1 is that the sanming museum is smaller than you'd think, you can prob get through it in an hour and a half tops. if you have extra time after, walk east on liexi street for about 10 minutes to the old confucian temple, it's not listed on google maps but locals know it, free to walk around and the courtyard has a nice quiet vibe.
for day 2, the taining ancient town is charming but it gets packed with tour groups by 2pm. i'd suggest going there first thing when you arrive, then do the geopark after lunch. the boat ride on shangqingxi is the highlight but the line can be 40 minutes long if you hit it wrong. also the last bus back at 17:30 is pretty strict, i missed it once and had to pay 80 yuan for a shared taxi, so keep an eye on the time.
day 3 in yongan is spot on. the bamboo forest trail is actually a bit longer than 2 hours if you stop for photos, which you will because it's gorgeous. there's a small noodle stall right outside taoyuan cave that does a mean bamboo shoot and pork noodle soup for 12 yuan, way better than the sit-down places in town. the return train from yongan to sanming north is frequent but the
solid itinerary, i've done parts of it a few times. for day 1, the dongxin night market is good but i'd actually walk a bit further to the smaller alley behind the main strip, it's like two minutes from the main market and the skewers there are cheaper and less touristy. the old woman at the third stall does a killer grilled tofu with chili sauce for like 8 yuan.
on day 2, if you have an extra hour in taining, walk over to the old town's south gate before it gets crowded. there's a tiny family-run workshop that still makes traditional bamboo weaving, you can watch them do it and buy a small basket for 15-20 yuan. way more interesting than the souvenir shops on the main street.
for day 3, the bamboo forest trail is great but if it's been raining, the path gets slippery near the top. the viewing platform is worth it though, i went in april and the mist made it look like a painting. also the train from yongan to sanming north is every 20 minutes or so, but the last one is around 6pm, so don't dawdle too long at lunch.

the marriott is nice but honestly the crowne plaza has better breakfast, they do this local snack called sha xiao chi that's hard to find in hotels, plus the pool is heated year round which matters in winter when it gets chilly
if you're staying in meilie district near the university, check out the night market on dongxin road around 8pm, it's smaller than the train station one but the grilled fish skewers are unreal, like 10 yuan for three and they're still sizzling when u get them
one thing i'd flag about the sanyuan district is that the bus to the city center can be packed during rush hour, like 8-9am and 5-6pm, so if you're staying there either walk or grab a taxi for like 12 yuan instead of waiting
the youth hostel near the station is solid but the private rooms have thin walls, i'd bring earplugs if you're a light sleeper, the dorm beds are actually quieter weirdly enough
nice breakdown of the districts, i've been bouncing around sanming for work trips the last few years and one thing i'd add is that liexi street gets really loud at night especially on weekends, like the karaoke bars blast music until 2am so if you're a light sleeper ask for a room facing away from the street or go a block deeper
for the family-friendly zone near the zoo, there's a tiny dumpling place called lao ma jiaozi on the pedestrian street that does handmade pork and chive ones for like 8 yuan a plate, the lady running it has been there forever and she'll remember your order if you go twice
the bus system is solid but the 19 line that goes from sanyuan to meilie takes a weird detour through some back roads and adds 15 minutes, just take the 1 or 5 instead if you're in a hurry
the airport shuttle's last run is at 9pm so if you land later you're looking at a 50 yuan taxi ride, worth knowing if your flight gets in after dark

if you're on a budget and staying near the train station, don't sleep on the night market that pops up around 7pm on jiefang road, it's a 5 min walk from the youth hostel and you can get a full meal for like 15-20 yuan, the stinky tofu cart near the entrance is actually legit
one thing the guide doesn't mention is that the sanyuan district can be a bit dead after 9pm, so if you're looking for any evening activity stay closer to liexi street or dongxin road, buses stop running around 10pm too so plan accordingly
