ngl I used to think the same thing when I first got here. the fare calculation is based on the route with highway but the toll is actually a separate cash charge they collect at the booth. it's legit, just a quirk of how grab works in bangkok. if you choose "add later" they'll just bill it to your card after the trip ends.
nah the toll is never included in the base fare on grab, it's always added on top. the fare estimate just uses the route with the highway as a default for time calculation but they charge it separately. you can pay cash at the booth or let them add it to the app payment later, both are legit. just keep some small bills handy if you opt to pay cash, the tolls are usually like 50-80 baht depending on how far you go.
honestly i just pay cash at the booth myself, it's easier than trusting the app to add it correctly later. the tolls are fixed amounts anyway so i usually hand over a 100 baht note and get change back. just make sure they actually go thru the toll lane and not try to pocket it, but been here 5 years and never had that happen with grab

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
