if u want something a bit different try tantanmen at isao in thonglor, its more of a sesame based broth so not your typical tonkotsu. they do a lunch set for like 280 baht which is pretty reasonable for that area. just get there before 12 or ur waiting 30 mins easy

honestly sukiyaki tei in siam square is my go-to, not strictly ramen but their shabu broth is so rich it hits the same spot. skip the tourist trap places on khao san, they overcharge for instant noodles

shinsha in ekkamai is my pick for something different, they do a dry ramen called abura soba with no broth just noodles tossed in soy sauce and pork fat with a raw egg on top. mix it all together and its super rich without being heavy like tonkotsu. theyre open late too till like 2am which is handy after a few drinks

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
