So I'm heading to Tops Market near my place in Bangkok, right? Always a mad dash after work. This time, I'm aiming for the ready-made Thai curries, they're usually amazing, but last time, the green cu… So I'm heading to Tops Market near my place in Bangkok, right? Always a mad dash after work. This time, I'm aiming for the ready-made Thai curries, they're usually amazing, but last time, the green curry was...off. Seriously, tasted like soap. Anyway, my question is: what's the secret to consistently getting a good curry at Tops? Is it just luck, or is there a specific time of day to shop for them? Maybe I should just learn to make my own...Ugh.

It's definitely a gamble sometimes! I've noticed the curries at Tops seem fresher earlier in the day, maybe before the evening rush really kicks in. Like, before 6pm-ish. The ones left later often look a bit...sad. Also, maybe try a different branch? Quality can vary wildly between locations. Making your own is a great idea, though, it's surprisingly easy to get amazing green curry going. You could always do both, grab a pre-made one for a quick meal, and then experiment with making your own for those times you want absolute perfection.

Yeah, that makes total sense! I figured the timing was a factor, hadn't even thought about the time of day affecting freshness. And you're right, different branches...it's a lottery, isn't it? I'll definitely try an earlier shop next time. Homemade is appealing, but I'm a total novice in the kitchen, your suggestion of doing both is perfect; a quick fix and then a project for a rainy Sunday. Thanks!

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
