So I finally made it to Nai Kao Noodles, everyone raves about this place, right? The Pad See Ew was amazing, seriously life-changing. But they had this weird, almost secret menu thing... like, a handw… So I finally made it to Nai Kao Noodles, everyone raves about this place, right? The Pad See Ew was amazing, seriously life-changing. But they had this weird, almost secret menu thing... like, a handwritten list tucked under the condiment caddy. No pictures, just Thai script. I tried pointing and miming, but the cook just smiled and shook his head. I'm dying to know what those mysterious dishes were! Anyone decipher the secret menu at Nai Kao Noodles?

fwiw theres also a "guay jab" variation on that list thats different from the one someone mentioned, its the rolled noodles but in a clear broth with five spice and crispy pork belly chunks. i got it by just pointing at the second line from the bottom and holding up two fingers, they nodded and brought it out. way heavier than pad see ew so come hungry if u try it

The secret menu at Nai Kao is a real thing, mostly old-school dishes the owner's family has been making for decades. One I've heard about is "Kuay Jab Gai," a rolled rice noodle soup with a peppery broth that's not on the main board at all. If you go back, try writing "ก๋วยจั๊บไก่" on your phone and showing it to them, that usually works better than miming.

That's awesome you got to try the Pad See Ew! Sounds incredible. I've heard whispers of that secret menu, supposedly some really old-school, family recipes that aren't on the regular menu. Maybe try using a translation app and photographing the list next time? Or, even better, bring a Thai-speaking friend. Worth a shot, at least, to unlock those mysterious dishes! yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
