So I finally made it to Nai Kao Noodles, that legendary spot everyone raves about in @Bangkok. The tom yum soup was incredible, seriously the best I've ever had. The tom yum soup was incredible, seriously the best I've ever had. But... the owner, this super chill guy with a crazy mustache, kept glancing at this hidden back room. He wouldn't let anyone go near it. I swear I saw a shadowy figure flitting past the door once. What's the deal with that mysterious back room? Is it some kind of secret ingredient storage? Or is it something... else entirely? I'm dying to know!

That back room is where Nai Kao ages his century eggs in the traditional clay pot method. He's got a small setup back there with about 200 eggs going at any time, and the shadow you saw was probably his nephew rotating them. The old man is superstitious about anyone else handling the process because one wrong turn and the eggs don't develop that creamy black yolk properly. If you go back, try ordering the tom yum with a century egg on the side, he only serves about 10 a day and they sell out by 2pm.

I have a friend who used to live in that neighborhood and he told me the back room is actually where Nai Kao keeps his racing pigeons. Apparently the guy is obsessed with pigeon racing and has won competitions all over Thailand. The shadowy figure is probably just his assistant who feeds them and cleans the cages, but he keeps it quiet because some customers might find it off-putting near the kitchen. If you go back, try asking him about his birds over a bowl of the tom yum, he'll warm up to you.

I've heard from a few food bloggers that the back room is just where he stores his vintage motorcycle collection. He's apparently got like six old Hondas back there and spends his evenings tinkering with them. The shadow you saw was probably him sneaking out for a smoke break by the bikes.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
