Thuyen's Secret?

I went to Thuyen last week, amazing food! Seriously, the best pho I've ever had. But the menu was only in Vietnamese, and I couldn't figure out what half the stuff was. But the menu was only in Vietnamese, and I couldn't figure out what half the stuff was. So my question is: Are there any secret menu items at Thuyen that aren't listed? I swear, I saw the chef make something incredible for a local, and it looked nothing like anything on the menu... I'm dying to know what it was!

yeah i've been going to thuyen for years and that "secret" stuff is usually just what they're eating family style in the back. if you saw something with a dark sauce and thin pork slices it was probably their thit kho (caramelized pork belly) which is not on the menu but they'll make it if you ask nicely and it's not too busy. go on a weekday around 2pm when the lunch rush is over and the owner's son is there, he's friendly and will translate for you if you're chill about it. also pro tip: the crispy spring rolls they bring out for regulars are just called cha gio, ask for those by name

Sounds like you caught a glimpse of the off-menu stuff they do for regulars. If it was a crispy fried thing with a fish sauce dip, it was probably the cha gio spring rolls they only make in small batches. Ask for "cha gio" next time you go and see if they have any.

as someone who eats there like once a week, i think what you saw was probly bun bo hue or maybe their broken rice with a fried egg. not really a secret menu, more like if you go enough they just start offering you stuff they're eating. the owner's wife is usually at the counter and she's cool, just say "like that" and point to what someone else is eating. if you want to try something special, ask for the com tam suon nuong around 1pm on a saturday, that's when they make extra for family and usually share if ur polite

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
