The smells alone are overwhelming, amazing, but overwhelming. Spent the whole day wandering, trying every street food stall I could find. Seriously, the variety is insane! From bizarre looking fruit I've never seen before to noodles I could only describe as "explosively flavourful", I was in heaven. My question is: Is there a definitive "best" Pad See Ew spot everyone agrees on? Because I had three different ones, and they were ALL amazing, but completely different. I need to know if I missed out on the ultimate experience.

You don't get a "best" in Bangkok, you get a "right now." The thing about Pad See Ew is the wok hei, that smoky breath of the wok, and it fades fast. So the stall you loved at 7pm might be mid at 9pm when the oil's been sitting too long. If you were near the station and saw a queue of locals in work clothes, not tourists with cameras, you were probably in the right zone already. Try the version with crispy pork belly next time, it changes the whole salt-to-fat ratio and makes the noodles feel like a full meal instead of a snack.

ngl you prob had the best ones already if you were near a train station. Thong Lo and Ekkamai have some solid spots but they're pricier and more touristy now. The real hidden gems are in the soi 71 area off Sukhumvit, there's this tiny stall run by an old auntie who's been there 20+ years. Her char level is perfect and she uses fresh rice noodles from a guy who delivers daily. If you didnt hit that one you prob got 95% of the way there anyway.

honeslty if you were near a train station it was prob Huai Khwang or Ratchada area, those stalls know what theyre doing. theres this one spot on Pracharat Bamphen soi 7 that does a sweeter version with crispy pork belly that people line up for, but tbh if you already had three good ones you basically experienced the whole spectrum anyway. Pad See Ew is like that, everyones grandma makes it different and theyre all right

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
