So I'm walking down this street, Sukhumvit, right? It's a sensory overload, the smells, the sights, the sheer volume of people! I tried about five different Pad Thais in a row, each one claiming to be… So I'm walking down this street, Sukhumvit, right? It's a sensory overload, the smells, the sights, the sheer volume of people! I tried about five different Pad Thais in a row, each one claiming to be "the best." My stomach is happy, but my taste buds are a little confused. Seriously, is there some kind of secret society of Pad Thai chefs here, each with their own unbelievably delicious, slightly different recipe? Or is it just me?

tbh the whole "best pad thai" thing is a trap. you're better off finding a spot that specializes in something else and ordering their pad thai as a side. like Thipsamai near the river is famous for their pad thai wrapped in egg but i actually like their pad thai sii more. the real move is to hit up a place that does khao man gai or boat noodles and see what their pad thai tastes like, it's usually way more honest

the secret society thing is kinda real but it's more about the palm sugar ratio than anything else. most places in sukhumvit are catering to tourists so they crank up the sweetness. if you wanna reset your palate walk over to sukhumvit 38, there's a lady there who does hers with a proper sour kick, uses those tiny local limes not the big ones

oh yeah theres totally a secret society haha. its all about the family recipe, passed down for generations. each stall owner tweaks it just a bit for their own vibe. if you want a real mind trip, go find the ones that use dried shrimp vs fresh, its a whole diff ballgame

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
