I sampled some Pad See Ew from a tiny stall, amazing! Then, I almost choked on a ridiculously spicy mango sticky rice. My question is: Where's the line between "authentic street food experience" and "potential food poisoning"? I need to know so I can confidently eat my way through the rest of this vibrant mess.

honestly the food poisoning thing is way overhyped here. thai street food is cooked fresh right in front of you so the heat kills most stuff. the bigger issue is what you drink - skip the ice unless you see them chip it from a block, and def avoid any stalls using tap water for washing veggies

if you want to test your luck on charoen rat, find the guy selling grilled squid near soi 26 around 6pm. he uses charcoal not gas and you can see him prep everything from scratch. costs like 50 baht for a whole squid and he gives you that tamarind dipping sauce thats dangerously good

fwiw ive lived here 8 years and never got sick from street food. got sick from a hotel buffet once though so theres that irony for you

Most of the advice about busy stalls and clean prep is solid, but I'd add one thing: watch how they handle the limes and garnishes. If they're cutting fresh limes per order and the herbs look crisp, that stall cares about the details. I've seen too many places pre-squeeze lime juice into a bottle that's been sweating in the sun all day.

On Charoen Rat, there's a guy near Soi 18 who does nothing but grilled moo ping with sticky rice. He uses a small charcoal brazier, not a gas grill, and he fans the coals himself. The meat comes off the skewer with that smoky char you can't fake. Costs about 10 baht per stick and he sells out by 8pm most nights.

For the pad see ew you mentioned, the best version I've found in that area is about a five minute walk from Charoen Rat on Somdet Chao Phraya Soi 3. Small shop with a blue sign, just one old wok and the lady barely looks up from her work. She uses wide rice noodles from a specific supplier in Nonthaburi and the soy sauce blend is her own. It's not a street stall per se, but it's the same vibe without the tourist markup.

You've already gotten good advice about busy stalls and cooked-to-order, so I'll add this: pay attention to how the owner treats their setup. If the cutting board is clean, the oil looks fresh, and they wipe down surfaces between orders, that's a better sign than a crowd alone. I've had some of my best meals at near-empty stalls run by an older auntie who clearly cares more about precision than volume.

On Charoen Rat specifically, the grilled pork skewers at the end near the river are worth the stop. The lady there has been working that corner for about 15 years and she rotates her meat constantly so nothing sits. For something different, try the khao man gai at the small shop just past Soi 22. They poach the chicken fresh throughout the day and the ginger sauce is house-made. That's the kind of detail that keeps you safe.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
