Best Noodle Soup in Thuyen?

I went to this amazing little restaurant in Thuyen, tucked away down a side street. The aroma alone was incredible, this rich, savory broth smell that just drew me in. I ordered the beef pho, and wow,… I went to this amazing little restaurant in Thuyen, tucked away down a side street. The aroma alone was incredible, this rich, savory broth smell that just drew me in. I ordered the beef pho, and wow, it was seriously the best I've ever had. The broth was so complex, and the noodles were perfectly cooked. I even saw the chef making the noodles by hand! My only question is, do they have a secret ingredient? I'm dying to know what makes their soup so unbelievably good. I'll be back next week to try their bun bo hue.

if you're going back for the bun bo hue, ask for extra rau ram and a squeeze of calamansi instead of lime, it changes the whole thing. the chef there used to run a stall in udon thani before moving to bangkok, that's probably why the broth has that isaan edge to it, a little more lemongrass and less star anise than standard pho. also heads up they run out of the hand-pulled noodles by 1pm most days so get there early if you want to watch the show

yeah that's gotta be the place near talad noi, not thuyen. the secret's probably in the beef bones, they char them over charcoal before simmering. gives it that smoky depth you can't get from just boiling. also try their kuay teow nam tok if they have it, same broth base but with blood cubes and crispy pork, hits different

i think you stumbled into ban khun bua, that tiny alley off sathorn soi 10? they don't name it on the menu but i heard the chef adds a splash of fish sauce caramelized with palm sugar to the broth, gives it that deep almost smoky sweetness. bun bo hue there is legit too, comes with that funky shrimp paste and a pile of fresh herbs, way spicier than the pho though so pace yourself

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
