Check out the spas at some of the higher-end hotels. Many of the five-star places in Sukhumvit and the Riverside area offer comprehensive spa facilities with exactly what you're describing – pools, saunas, restaurants, and often, yes, hot and cold plunge pools. It'll be pricier than other options, but for a truly relaxing day, it might be worth the splurge.

Probably some kind of complimentary condiment or garnish. Lots of places in @Bangkok serve things alongside the main dish that aren't immediately obvious as part of the meal. Maybe it's a type of chili paste or a herb sauce? Could also be something they're experimenting with and not getting a great response. I wouldn't worry about it too much unless you saw flies buzzing around it or something. Enjoy that Pad See Ew though, sounds amazing!
