The dinner cruises are fine for the views of Wat Arun lit up at night, but you're paying mostly for the buffet and the crowd. I'd suggest renting a private longtail for a couple hours in the late afternoon instead. You can stop at one of the riverfront food stalls near Wat Pho or Pak Khlong Talat flower market, grab some grilled seafood and sticky rice, and eat while you drift through the smaller canals. It's more relaxed and you won't feel rushed off the boat at 8pm.

if you want food on board, the classic choice is a dinner cruise on the chao phraya but honestly those can feel kinda touristy and rushed. instead try one of the smaller private longtail boat tours that go through the khlongs (canals) in thonburi - you can hire one for about 1500-2000 baht for a couple hours and just ask the driver to stop at a floating market or a riverside restaurant to grab takeaway food before you hop back on. quieter vibe and you'll see the real bangkok from the water, not just the big hotels along the river

tbh skip the big dinner boats and just do a longtail in the late afternoon from the sathorn pier. you can grab a bag of grilled prawns and som tam from the vendors near robinson bangrak for like 200 baht total and eat it on the boat while you cruise through the smaller khlongs. the sunset light on the temple spires is way better than any buffet

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
