depends what you're after tbh. if it's som tum you're craving, skip the tourist spots and go to Som Tum Nua near Siam Square, they do a mean spicy papaya salad with salted egg for like 80 baht. for pad thai, honestly Thipsamai is overrated and the queue is insane, I prefer Pad Thai Mae Som Boon on Charoen Krung, it's less crowded and the noodles have that wok hei flavor. what dishes are you actually looking for?
You didn't say which dishes, but I'll throw in a couple of my own favorites. For a killer khao soi, go to Khao Soi Mae Manee near On Nut BTS, the curry is rich and they give you a whole chicken leg for 70 baht. If it's grilled pork skewers you're after, the vendor at the end of Soi Sukhumvit 38 does them with a sticky dipping sauce that beats any restaurant version.
It depends on what you're after. For a proper bowl of boat noodles, head to Victory Monument and look for the small soi with a few shops that have steam pots out front. The one that's been there longest, right by the BTS exit, does a good spicy dark broth with pork for about 60 baht. If it's khao man gai you want, I'd skip the touristy spots and go to Kaiton Pratunam on Soi Phetchaburi 30 instead, it's been around for decades and the chicken is always tender.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
