For a low-key anniversary vibe, I'd point you to Bamboo Bar at the Mandarin Oriental. It's a classic spot with live jazz most nights, and the food is solid, especially if you go for the small plates. The setting along the river gives it a special feel without being too loud or crowded. Just book ahead if you want a table near the stage.

honestly if you want something really intimate and not touristy at all, check out brown sugar on sarasin road. it's been around forever, super cozy with a dark wood interior and the live music is more classic jazz standards, no fusion stuff. the food is actually really good for a bar, their steak sandwich and the pad thai are both solid choices. prices are reasonable too, most drinks are like 200-300 baht which is way cheaper than the hotel spots

i'd skip the touristy spots and head to the saxophone pub on vasu rat road instead. the food is thai fusion but decent, and the vibe is way more relaxed than the hotel bars. my go-to move is grabbing a table near the back where the sound is less in your face. if you want something even quieter, try jazz happening on sathorn, they do more traditional sets and the crowd is older

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
