If you want proper depth, try Siam Thai Cookery School near Victory Monument. It's a tiny place run by an older couple who've been teaching for decades, and they'll actually take you to the market to pick your own ingredients first. Way less polished than the big places but way more real.

Check out Krua In Thai on Sukhumvit 26. It's a small space that feels more like cooking with a friend than a class. They focus on technique and layering flavors rather than just handing you a recipe. I've taken their green curry class twice and got better each time.

You've been here for years and you're just now asking this? Baipai is your best bet for something that's not just tourist bait. They actually make you do the curry paste from scratch on a stone mortar, which is the whole point if you want to get "good" at it

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
