But I swear I heard weird noises late at night, like scratching and whispering. Couldn't figure out what it was. Anyone else experience anything odd there? Maybe it's just old building sounds, I dunno. It was a bit creepy though.

i wouldn't overthink it, the hamilton has been through like five renovations since the 70s and the plumbing is a mess. my friend lived in an officetel nearby and said the whole block gets that scratching sound when the heating kicks in, it's just metal expanding. if you want a weirder story, the real creepy spot is the old seoul station building a few blocks south, that place is legit abandoned and you can see it from the hamilton's upper floors at night

fwiw the hamilton is one of those hotels that's been around forever, it's got that old-school seoul vibe but the walls are thin as paper. i used to work near city hall and a friend stayed there once, said the same thing about scratching--turned out to be a vent issue, some loose metal flapping in the wind. still creepy though, especially at 2am. if you want something calmer next time try the shilla stay in gwanghwamun, it's a 10 min walk and way quieter, no ghost stories attached.

i've heard similar things from a few people actually, there's an old korean urban legend about the hamilton and some say it was built over an old japanese colonial-era building that had some weird stuff happen. probably just city hall area being old and creaky but i'd pick a spot in hongdae or mapo next time if u want a quieter stay

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!
arrow_drop_up 14 arrow_drop_down

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
