Seriously, industrial chic taken to the extreme. Loved the food, though, inventive Korean fusion, definitely worth the hype. But my biggest question is: how do they manage to keep the place so clean? I mean, it's basically a concrete box. Dust bunnies should be a major concern, right? I'm genuinely curious about their cleaning routine!

honestly the air purifiers are a huge part of it, you can see the vents if you look up near the ceiling. also they use this special concrete sealer that's basically like a giant non-stick pan coating, my cousin runs a cafe in hongdae with the same look and she says they just wipe everything down with a microfiber cloth and it's fine. the real trick is they vacuum like three times a day, which is insane but it works.

You can see how serious they are about it if you watch the staff during a lull. I was there on a Tuesday afternoon and watched two people go over the same floor section with a dry mop, then a damp one, then a dry one again. It's almost obsessive but that's what it takes with that raw concrete finish. Also worth noting that Cement is in a newer building in Hannam-dong so the HVAC system is probably top of the line, which helps keep the dust from even settling in the first place.

The concrete jungle aesthetic is a whole thing in Seoul right now, and you're right, dust should be a nightmare. I've actually asked a friend who works at a similar spot in Seongsu-dong, and she said they use a specific electrostatic mop system that grabs everything, plus they seal the concrete with a matte finish that repels dust. The real secret might be the air purifiers, they run industrial grade ones constantly, which cuts down on what settles. If you're ever curious about the details, the staff at Cement Seoul are usually happy to chat about it if you catch them during a slow moment.

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
