There's a street food fair every night just right outside the hotel, everyday except Monday as far as I can understand. Does anyone know about the (my translation) "Jongno-gu Nagwon-dong" street stalls? And if so, any recommendations on which one I should eat? Every night it's filled with locals until midnight, eating and drinking and laughing! Tomorrow is the day I will try to live like a local :)

The area you're describing is Nagwon-dong Nakwon Shopping Center, though locals just call it Nakwon. The stalls run along the alley between the piano shops and the instrument arcade, and the Monday closure is real, vendors take that day off because the office crowd thins out. For a first night I'd skip the tteokbokki tents and look for whoever's grilling dakgalbi or doing golbaengi muchim, that's what the after-work groups actually order with their beer. Prices run around 15,000 to 20,000 won per plate, cash is easier than card at most of the smaller carts.

honestly the stalls shift a bit week to week so just follow the crowd, whoever has the most ajusshis crowded around is usually the winner. for a first timer get the tteokbokki and some twigim, and grab a spot at one of the pojangmacha tents for soju if you wanna fully blend in.

You're staying right on top of Nagwon-dong mall, that's the covered arcade behind the hotel and the stalls set up in the alley by the piano shops every evening. It's not some hidden gem, it's just where office workers go for beer and anju after work, which

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
