Hey everyone!

Are there any bar, cafe, or small restaurant owners here who've tried guest shifts or done collaborations with other places?

Have you hosted a guest bartender or chef before?

How did you organize it, and how did it go?

If you haven't, what's stopped you from trying it? Is it logistics, interest, or something else?

Thanks!

I've done a few pop-up style collabs where we just took over a corner of a friend's bar for a week, not a full guest shift. Way less pressure and you can test the waters without committing to a whole night. Just bring a few signature drinks or dishes and see if people actually bite.

honestly the best collabs i've seen in seoul are the ones that lean into the contrast rather than trying to match vibes perfectly. there's a little spot in haebangchon that does guest chef nights from a busan seafood place and the clash actually works because both crowds are adventurous eaters. the key is finding that overlap in curiosity rather than demographics

for organizing i'd say the biggest mistake is overpromising marketing. i've watched places spend weeks designing posters and ig graphics for a one night thing and then get like 12 people because they forgot to actually tell their regulars in person. just put a handwritten sign on the door and mention it when people pay, that's way more effective than any collab post

if you're worried about logistics start with something smaller than a full guest shift. just buy a case of their house wine or use their coffee beans for a week. you get to test the collaboration muscle without the pressure of a full takeover night

the collab thing works best when both spots have similar crowd energy. i tried a guest shift at a place in hongdae once and my regulars from seongsu just didn't vibe with the late night party crowd there. if ur near mangwon or yeonnam those neighborhoods have a bunch of small wine bars and cafes that are way more open to swapping shifts casually.

logistics are honestly the easiest part if you just keep it to a one night thing and don't overthink the menu. the biggest hurdle i see is people worrying about losing their regulars to the other spot but that never really happens in my experience. just pick a slow tuesday or wednesday and see how it feels

The place was PACKED, like seriously wall-to-wall people. I managed to snag a spot at the bar and ordered their legendary spicy soy garlic wings, holy moly, they were incredible. The crunch, the flavor...it was a flavor explosion. But here's the thing: I saw the owner, this super chill dude, whispering to a staff member about some "special sauce." I'm dying to know... what's the secret ingredient in that insane sauce?!

the whispering thing is real but its not about the sauce lol. that guy runs a 2am handoff with the chicken supplier, they drop off fresh birds from a farm near Chuncheon three times a week instead of using the frozen stuff most hongdae spots rely on. thats why the texture hits different, not the sauce itself. if u go back ask for the neck & wing combo off menu, its cheaper & honestly the best cut they do

arrow_drop_up 24 arrow_drop_down

the thing nobody mentions is that Dogdogdog's sauce gets its body from cheong, the Korean rice syrup, not sugar. thats why it coats the wing so thick and stays glossy instead of going sticky. i asked a guy who worked there and he said they also add a splash of maesil (plum) extract at the end off the heat. that fruity tang under the garlic is what you're tasting. go on a weekday before 6, weekends the wait hits 40 min easy.

honestly the "secret sauce" thing is prob just marketing. every fried chicken place in Seoul has a version of that story. the real difference at Dogdogdog is they double fry in rice bran oil and toss the wings in the sauce twice, once right out of the fryer and again after a 30 sec rest. thats where the crunch comes from, not some mystery ingredient. if u wanna taste the actual base, order the banban half plain half spicy and dip the plain one in the spicy sauce yourself.
