What to eat in Gaozhou?

I'm heading to Gaozhou next month and I'm wondering what food I should prioritize. Any must-try local dishes or hidden gems you'd recommend?

If you're around in the morning, definitely grab some zongzi from the old ladies near the bus station on Gaoliang Middle Road. They wrap them fresh with pork belly, salted egg, and mung beans, and they're still steaming when you buy them. For a proper dinner spot, the claypot rice places along Panzhou South Road are solid, especially the one with the red sign that's been there for over 20 years. The cured sausage and chicken version is what most locals order.

another thing worth trying is the steamed fish head with black bean sauce at the little seafood places near the old pier on Binjiang Road. they use local freshwater fish and the sauce is darker and more fermented than what you get in the city restaurants, really punchy. for a quick breakfast the sesame pancakes from the cart outside the morning market on Gaoliang North Road are perfect, they're thin and flaky with a bit of sugar inside, costs like 2 yuan each

Gaozhou is really all about the raw dishes and preserved fruits. You have to try Gaozhou salt-baked chicken, it's not like the Cantonese version at all, the skin is crispy and the meat stays juicy because they pack it in coarse salt and bake it whole. For something sweet, look for the dried longan and preserved hawthorn sticks sold at the street stalls near Panzhou Park, they're way better than the mass-produced stuff you find online. A lot of locals also swear by the morning rice noodles from the small shops on Jiefang Road, they top them with a thin soy-based gravy and pickled vegetables.

You can't leave without trying the salt-baked chicken, but the real local move is to find the street vendors selling it wrapped in paper near the night market on Panzhou Road. They carve it up on the spot and the skin stays crackling. For a snack, the candied kumquats sold in little plastic bags outside the older tea houses are a good bet, they're tart and chewy, not the syrupy mess you get elsewhere. If you want something hot and soupy, the beef offal stalls on Zhongshan Road do a great version with radish and a chili sauce that'll wake you up.
