Sichuan Heat?

Question

So I finally made it to that Sichuan Restaurant near the Lama Temple, the one everyone raves about. Man, the food was *intense*. Seriously, my mouth was on fire for like, an hour afterwards. I ordered the Mapo Tofu, thinking I could handle the spice... I was wrong. But wow, the flavor was incredible, even through the flames. Worth it? Absolutely. But my question is: are there any secret menu items or dishes the locals know about that aren't on the regular menu? I'm going back next week and need to conquer that heat!

ask for 水煮鱼 off-menu with 少辣 and they'll usually do it. also order a side of 冰粉 before the mains, it kills the burn way better than beer.

If they know you, you can get 干煸四季豆 with extra 花椒 and the kitchen will dial up the numbing. Also try 夫妻肺片 as a cold starter, it's less brutal than it sounds.
