this is a solid itinerary, especially hitting cai rang at 6am. one thing i'd add is that if you go a bit later, say 7am, you can grab coffee from one of the boats tied together near the main channel, they'll pull up alongside and pour it for like 10k vnd, it's a great little scene
also, skip the can tho museum if you're short on time, it's pretty bare bones. instead, walk over to the old market building on hai ba trung right at the wharf, it's got this huge faded yellow facade and some interesting local shops inside, way more character
for phong dien, i actually prefer it to cai rang because it's smaller and feels more authentic, less tourist boats. just make sure your taxi driver knows to wait for you, it's a bit tricky to get a ride back from out there
the cooking class at mekong rustic is worth it, i did that last year and the guide took us to a local market i never would have found on my own. they let you pick your own herbs and veggies from their little garden too
for the ancient house, if you go on a weekday it's usually empty and the old lady who lives there might offer you tea and tell you stories about the french colonial days. she doesn't speak much english but it's a nice moment
one thing missing is the night market on hai ba trung, it's not just food, there's this one stall near the end that sells grilled rice paper with quail egg and dried shrimp for like 15k, perfect after a few beers
solid plan, one thing i'd tweak is the bang lang stork sanctuary timing. sunrise is nice but the storks are way more active around 4:30-5pm when they come back to roost, you get this huge swirling cloud of them overhead. the morning is just them sitting around

n an ninh street, it's a hole in the wall but their broken rice with pork is like 35k and way better than anything at a sit-down place
and if you're at ninh kieu at night, skip the bridge and walk along the path behind the statue of uncle ho, there's a few families selling sugarcane juice for 5k a glass and you can hear the frogs in the river, really chill

honestly the cycling tip is solid but i'd say skip my khanh if you want real countryside vibes. head out toward tra on village instead, it's about 15 km from the center and the roads are quieter, you'll pass through pineapple fields and see farmers actually working
the fruit orchards out there are cheaper too, i paid 20k for a coconut straight off the tree versus 50k at my khanh. just follow the road past the university and keep going till the pavement turns to gravel, that's where it gets good
the museum is worth a quick stop but dont expect much english signage, i spent like 20 minutes there and saw everything. the real history vibe is at the old house on phan dinh phung street, it's a wooden stilt house from the 1800s that some family still lives in, they let you walk around for free if you're respectful
The guide covers the main spots well, but I'd add that if you go to Cai Rang, ask your boat driver to take you past the big wholesale boats into the smaller canals. Most tours just loop the main channel and miss the quieter parts where you see families living on the water, kids waving from their houses. I did that last year and it was the best part of the morning, cost me an extra 50k on top of the standard tour.
For the food tour, skip the night market banh cam and grab some from the lady with the cart on Mau Than Street near the university around 3 PM. They're fresher and about half the price, 5,000 dong each instead of 10,000. She's been there for years and the filling is sweeter than what you get at the tourist spots.
people sleep on the late afternoon at cai rang if you ask me. the market mostly winds down by 9am but around 4pm the smaller boats come back with leftover stock and sell it cheap to locals, i got a whole bag of mangoes for 10k once. the light is nicer for photos too, less harsh than the morning sun
for the water puppet show, the one at the water park is fine but the cultural center has a smaller troupe that does weekend shows in the garden out back. it's 30k and way more intimate, you can see the puppeteers working the rods from the side if you sit close. my aunt's neighbor runs it so i might be biased but the kids always get a kick out of it
