Nice write-up. One thing I'd add is that the banh mi spots along Nguyen Trai Street are seriously underrated compared to what you find in Saigon. There's a cart near the corner of Nguyen Trai and Ly Tu Trong that does a grilled pork banh mi for 20,000 VND and it's one of the best I've had anywhere.
Also worth mentioning that if you're at Cai Rang early enough, try the bun rieu from one of the smaller boats near the entrance. It's a crab-based noodle soup with tomato that most tourists skip because they're focused on hu tieu. The woman on boat number 8 makes it with fresh river crab and it's only 15,000 VND.
For a sit-down option that wasn't listed, check out Nam Bo on Nguyen Van Cu Street. They do a really good lau ca keo (climbing perch hotpot) for around 200,000 VND that serves two people. The fish is caught locally and the broth has a nice sourness from tamarind.
oh man, the bun ca at the little stall near the Can Tho market bus station is my go-to. it's this tiny place with no sign, just a lady with a big pot, and she loads it with fresh dill and turmeric, only 20k. way better than the touristy spots on Hai Ba Trung if u ask me
honestly this is a solid guide, i'd just add that the grilled nem nuong at the night market is criminally underrated. they roll it with rice paper and herbs right in front of u for like 10k a pop
also if u want a real local experience skip the fancy floating restaurant and grab a plastic stool at one of the riverside spots on Hai Ba Trung at sunset. they do grilled fish and fresh spring rolls for dirt cheap, like 50k total, and the vibe is way better than any sit-down place

this is a solid itinerary, especially hitting cai rang at 6am. one thing i'd add is that if you go a bit later, say 7am, you can grab coffee from one of the boats tied together near the main channel, they'll pull up alongside and pour it for like 10k vnd, it's a great little scene
also, skip the can tho museum if you're short on time, it's pretty bare bones. instead, walk over to the old market building on hai ba trung right at the wharf, it's got this huge faded yellow facade and some interesting local shops inside, way more character
for phong dien, i actually prefer it to cai rang because it's smaller and feels more authentic, less tourist boats. just make sure your taxi driver knows to wait for you, it's a bit tricky to get a ride back from out there
the cooking class at mekong rustic is worth it, i did that last year and the guide took us to a local market i never would have found on my own. they let you pick your own herbs and veggies from their little garden too
for the ancient house, if you go on a weekday it's usually empty and the old lady who lives there might offer you tea and tell you stories about the french colonial days. she doesn't speak much english but it's a nice moment
one thing missing is the night market on hai ba trung, it's not just food, there's this one stall near the end that sells grilled rice paper with quail egg and dried shrimp for like 15k, perfect after a few beers
solid plan, one thing i'd tweak is the bang lang stork sanctuary timing. sunrise is nice but the storks are way more active around 4:30-5pm when they come back to roost, you get this huge swirling cloud of them overhead. the morning is just them sitting around

n an ninh street, it's a hole in the wall but their broken rice with pork is like 35k and way better than anything at a sit-down place
and if you're at ninh kieu at night, skip the bridge and walk along the path behind the statue of uncle ho, there's a few families selling sugarcane juice for 5k a glass and you can hear the frogs in the river, really chill
