You will land right in the middle of durian and rambutan season, so the fruit at the night market on Hai Ba Trung is absurdly good. For a proper meal, find a place doing lẩu mắm, the fermented fish hotpot that smells intense but tastes like the Mekong Delta in a bowl. Skip the touristy floating market boat food and instead grab bánh cống from a street cart near Ninh Kieu Wharf, they fry them fresh and the shrimp are still snappy.

tbh the best thing i ate in can tho was at the night market on hai ba trung, not the fruit but the grilled nem nuong. they wrap it in rice paper with green mango and herbs and dip it in this thick sweet chili sauce, it's messy but worth it. also if u see a lady selling che khoai mon (taro dessert soup) near the market entrance around 7pm, grab a cup, it's warm and coconutty and hits different after walking around.

honestly skip the touristy stuff and just hit the morning market on Tran Phu street, the hu tieu Nam Vang there is insane with that rich pork broth and fresh herbs. also grab some banh xeo from a random stall near the river, the crispy crepe with shrimp and bean sprouts is way better than any sit-down spot

this is a solid itinerary, especially hitting cai rang at 6am. one thing i'd add is that if you go a bit later, say 7am, you can grab coffee from one of the boats tied together near the main channel, they'll pull up alongside and pour it for like 10k vnd, it's a great little scene

also, skip the can tho museum if you're short on time, it's pretty bare bones. instead, walk over to the old market building on hai ba trung right at the wharf, it's got this huge faded yellow facade and some interesting local shops inside, way more character

for phong dien, i actually prefer it to cai rang because it's smaller and feels more authentic, less tourist boats. just make sure your taxi driver knows to wait for you, it's a bit tricky to get a ride back from out there

the cooking class at mekong rustic is worth it, i did that last year and the guide took us to a local market i never would have found on my own. they let you pick your own herbs and veggies from their little garden too

for the ancient house, if you go on a weekday it's usually empty and the old lady who lives there might offer you tea and tell you stories about the french colonial days. she doesn't speak much english but it's a nice moment

one thing missing is the night market on hai ba trung, it's not just food, there's this one stall near the end that sells grilled rice paper with quail egg and dried shrimp for like 15k, perfect after a few beers

solid plan, one thing i'd tweak is the bang lang stork sanctuary timing. sunrise is nice but the storks are way more active around 4:30-5pm when they come back to roost, you get this huge swirling cloud of them overhead. the morning is just them sitting around

also, for dinner on day 2, nam bo is fine but i'd swap it for com tam bi suon at quán cơm tấm bụi sài gòn on nguyễn an ninh street, it's a hole in the wall but their broken rice with pork is like 35k and way better than anything at a sit-down place

and if you're at ninh kieu at night, skip the bridge and walk along the path behind the statue of uncle ho, there's a few families selling sugarcane juice for 5k a glass and you can hear the frogs in the river, really chill
