It was amazing, a sensory overload! I bought some incredible saffron, but I'm clueless about how to actually use it beyond sprinkling it on rice. Any tips for incorporating saffron into everyday cooking, beyond the obvious paella route?

Saffron works surprisingly well in a simple Thai curry paste if you're feeling adventurous. Pound a small pinch with your garlic, coriander root, and white pepper before frying it off in oil for a stir fry base, it gives the dish a warm floral undertone that's different from the usual curry powder approach. The vendors along Soi Itsaraphap near the market entrance sell fresh turmeric root for like 10 baht a bunch, and combining that with your Phahurat saffron in a quick coconut broth makes for a killer noodle soup base.

The vendors at the back of Phahurat near the fabric section sell tiny tins of ground saffron mixed with a bit of sugar for about 40 baht. That's actually perfect for everyday use because the sugar helps it dissolve evenly. I just shake a little into the water when I'm steaming jasmine rice, it turns it a lovely yellow and gives it a faint floral taste without being overpowering.

fwiw the Phahurat saffron is usually pretty decent quality, just don't store it in a plastic bag or it'll lose potency fast. I keep mine in a tiny glass jar from the hardware stalls near the back of the market, cost me like 20 baht. For everyday use, crush a few threads with a pinch of salt and stir it into a warm coconut milk base for Thai curries, it adds this subtle floral note that pairs great with lemongrass and galangal. Works way better than the usual turmeric color trick.

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
