The street food was amazing, seriously, the best pad see ew I've ever had was from a tiny stall tucked away down a side street. But...the sheer volume of people. It was sensory overload sometimes. My question is: Are there any truly quiet, hidden cafes or bars along Sukhumvit that even locals go to escape the madness? I'm planning another trip and want some peace and quiet amidst all the chaos.

You're right about the sensory overload. For quiet spots, try the cafes tucked inside the Ari neighbourhood further north. It's still on the BTS line but feels like a different city. One I like is Nana Coffee Roasters on Soi Ari, it's set back from the street with a garden and the crowd is mostly locals reading or working. For evening drinks with less chaos, Soi 26 has a few low-key wine bars like Cuisine de France that are popular with expats who've been here long enough to know better.

imo the trick is going up not just deeper. soi 31 has this tiny wine bar called vino loco on the third floor of a random shophouse, no sign from street level, just a doorbell. they do natural wine and the owner's usually just reading a book, barely notices you. also check the small dead-end soi off 33/1 near the american uni, there's a garden cafe called patom that's literally in an old house with a pond, most people walk right past it cause the entrance looks like someone's driveway

for real quiet you gotta go deeper into the soi than most people bother. soi 22 has a few hidden spots like the rabbit hole, it's a tiny wine bar tucked behind a metal gate, no sign. also check out the back alleys off soi 12 near benjakitti park, there's a small coffee place called kaizen that's basically a living room with a counter, locals sit there reading for hours. most tourists never go past the first block of any soi

yeah Krua Dok Mai Kao is solid but if you're up for a detour, try Som Tum Nua near Siam Square. their som tam pu pla ra is insane if you like the fermented fish sauce kick. way more pungent than the On Nut spot, just less grilled chicken options
